My goodness I love whipping these up as a weekend treat. It takes just a couple of minutes to prepare so it’s super quick and makes a delicious brunch option! This is low FODMAP, gluten and dairy free (if you don’t add yoghurt afterwards) and as far as pancakes go- pretty darn healthy!
To make 6-8 pancakes:
- 2 bananas
- 4 eggs
- 2 table spoons desiccated coconut
- 2 handfuls of blueberries
Throw all the ingredients into a blender to make the batter, heat a non-stick frying pan with coconut oil and on a low heat pour batter in and flip when pancakes are ready! It’s important to fry on a low heat as otherwise they will burn really quickly!
I added a couple of spoonfuls of my probiotic yoghurt, a sprinkling of coconut, dollop of peanut butter (just for a protein kick) and a few grapes on the side. Enjoy!
